Recipe: Pear & Parsnip Puree
Ingredients: 1 Pear 2 Med. Parsnips, cleaned and peeled 1T Armagnac 2 Sage leaves
Cooking Instructions: 1. In a sauce pot, boil 3C of salted water and sage. Add parsnips and cook until tender. Approx. 3-4 minutes. Drain water and remove sage leaf. 2. Peel and core pear. Cut into ½” pieces. Toss with Armagnac. 3. In a food processor, puree the parsnips and pears.
