Recipe: Mushroom Latte
Ingredients: See Mushroom Ragout 1.
In the skillet used for the Ragout, remove the mushroom mixture.
Add 1oz shallots and sweat in pan. Deglaze with remaining Sherry.
Cooking Instructions: Add Morel Liquor and Mushroom Liquor. Reduce by half Add the cream reduce for 5 minutes. Adjust seasoning. Strain the mixture. Pour into an Isi Mini Whip. Release Latte on to plate for service.
