Recipe: Grappa Blackberry Pan-gravy
Ingredients: Pan drippings (from seared meat) 2 teas. Butter 2 teas. Shallot, chopped Black Pepper, freshly ground and liberally 1/3 Cup Isaiah Morgan Grappa or Brandy 1/2 Cup Heavy cream 2 Cups stock Salt to taste
Cooking Instructions: 1) Remove meat from pan and reserve. Place pan on stove top over medium heat and add the butter, chopped shallot and black pepper. 2) Stir briefly and add Grappa before shallots burn. Add heavy cream and swirl and reduce until well blended. Raise heat to medium high and add stock and salt to taste. Continue to swirl and adjust seasoning. 3) When sauce is at the right consistency remove, strain and serve.
