Recipe: Game Bird Sauce
Ingredients: See Grilled Quail with Stuffed Fig and Bacon 2C Game bird Stock ½ C Onion, med dice ¼ C Celery, med dice ¼ C Carrot, med dice
Cooking Instructions: 1. In a sauce pot, brown the bones, ½ a bacon strip, ½ a fig, and mire poix. 2. Add the stock. Bring to simmer. 3. Reduce by half 4. Stain through a chinoise. Season with salt and pepper.
